Do you know about endive? I recently discovered this awesome vegetable and use it all the time. It’s the greatest thing since sliced bread! Actually, it’s better, because I use it instead of bread. Or crackers and chips.
Who knew this often overlooked veggie could be so wonderful? Most breads, crackers and chips are so unhealthy because they’re made with wheat or cheap, poor quality oils. And, if I eat too much of that sort of stuff, even the healthier brands, I can really pack on the pounds. So, for me, endive is a real life-saver for those times I want to have dip like hummus and guacamole or tuna, chicken, egg or seafood salad. I even stuff quinoa salad – jazzed up with curry, raisins and cashews into endive leaves. They’re also great alternatives to tortillas or taco shells. Just fill your endive leaves with your seasoned beans, cooked chopped or ground turkey, chicken or grass-fed beef and top with a little salsa, cheese and plain Greek yogurt (instead of sour cream). Just be sure to keep it light and go easy on the sauces. You don’t want to pack your endive leaves with too much or they’ll be heavy and soggy and fall apart.
