Who doesn’t love chocolate? And a cherry covered in chocolate? So luscious. Impossible to just eat one, right? And because they’re so decadent and tempting, but loaded with sugar, you probably avoid them. You won’t buy them for yourself, but occasionally you’ll get a whole box of chocolate covered cherries as a gift. And if they’re the really good kind, with the liquid center (not the sick-y sweet creme center) and smothered in dark chocolate, look out!
All I can say is, if someone cares enough to give you those, go ahead and enjoy each one. And do try, no matter how difficult, not to eat the whole box at one sitting. Here’s a little something to help pace yourself – a Chocolate Cherry Smoothie. So yummy that maybe, just maybe, your box of chocolate covered cherries will last longer than a week. It’s healthy and satisfying enough for breakfast or any time you’re craving something rich, decadent and chocolaty.
Here’s how to make it….
1 large banana, previously peeled and frozen
1 cup dark sweet cherries (pitted).
1 cup packed spinach
1 tablespoon raw cacao powder
1 cup unsweetened almond milk
1 tablespoon cacao nibs, optional
What to do:
Add the spinach and almond milk into the blender. Blend until completely smooth. Add in the banana, cherries, and cacao powder. Blend until smooth. Toss in the cacao nibs and pulse a few times to combine. Pour into a glass and serve.
Makes 1 – 2 servings. You can use frozen cherries instead of fresh, if desired, but cut back a bit on the almond milk. Not too much, though. Just enough to avoid a smoothie that’s too watery.
